Recipe: Lamb rack with pesto.
This is a quick and tasty recipe: what you need are one or two lamb racks, and plenty of pesto. Preheat the oven at 220 degrees; lean an oven tray with baking paper. Smear the lamb rack all over with a generous quantity of pesto. Lay on the tray and bake for exactly 20 minutes. Retrieve from the oven and let rest for 5 minutes, then cut into single cutlets and serve with all the bits of pesto.
